Chicken, Hillshire smoked sausage, and bulk breakfast sausage. Boil the chicken, take the meat off the bone, cut the Hillshire into 1/4 in. circles, add the Hillshire to the liquid and slow boil for about 15 min. and remove. Fry the breakfast sausage and mix with the Hillshire and chicken. Add 2 cups of broth to cup of rice. Salt and pepper to taste.

Boil whole chicken 1 hr with sweet onion chopped

Boil Carolina gold rice al dente 2 to 1 with water from boiled chicken

Andouille quartered browned in pain

Caramelize another sweet onion and bell pepper after removing sausage in its goodness

Hand pull chicken adding to al dente rice, sausage, onion and bell pepper

Season with cayenne, Worcestershire sauce, fresh black pepper, salt, cumin, couple tbsp of butter and hot sauce

If you over cook rice and it dries out add half a can to a can of cream of chicken.

How much pain does my Andouille need to be in ? I mean , I like Perloo as much as the next guy but I don't necessarily want to hurt my sausage any more than I have to .

Pre cook about three bone in chicken breast in your crock pot. I always add a couple of bouillon cubes and plenty of water because this will make the stock you use to cook your rice in.

Take a pack of bacon and cut into small half inch strips, start by cooking them in the bottom of your pot. Don’t brown them, put fry till about half cooked.

Next add one finely chopped onion to the pot, once don’t brown but cook till translucent.

Then add your chopped up hilshire smoked sausage, cooking for just a few minutes.

Now add the chocked stock back to the pot.
How much you add depends on how much rice you plan on cooking because it’s always a two to one ratio. I use about 6 cups of broth and three cups of rice. Add salt and pepper to taste.

Boil for about 20 minutes and check. If soupy, boil longer till it reaches the right consistency.

Add shredded chicken back once rice is done.

Slap your mom for never making you anything this delicious.

Cream of chicken is for fixing it, not part of the recipe. Most people over cook the rice and dry it out the first few times they make it.

Mostly good advice here. My mother made chicken bog without sausage. I liked it. My wife (from NC) had never heard of it, so when she made it, she tried adding cooked/crumbled peppery patty sausage to it for a little more kick. I liked it. After a while, I decided I liked the sausage so much that a little more heat might be good, so I sprinkled some Texas Pete or Frank's Hot Sauce on it as a test. I liked it.

I haven't yet tried it with Andouille sausage, but it would probably be very good to me since I cook other things with rice and Andouille sausage, but they often include tomatoes and okra.

So, the takeaway for me was that I liked chicken bog no matter how it was done. Chicken, rice, onion, bell pepper, celery, sausage, salt and pepper........ nothing finer!

My wife always told me I liked to cook everything in one pot and I do. A Southerner can live quite well by combining onion, bell pepper, celery, rice, and any other vegetables of choice with some meat and/or shrimp in the same pot with a choice of seasoning.

There is one rule for chicken bog...... loaf bread is a "must have".

I’ve made it many different ways. One of my favorites is to just keep it simple because that’s how my best friend’s mom taught me...... the other way is with a Puerto Rican twist. To tell you the truth, it’s more of an arroz con pollo style but it will have kilbasa. Man! Now I’m hungry.
