If you were at a good old pig picking BBQ and a heated argument broke out between a gamecock fan and an NC State fan about which team has the richer history; what type of BBQ sauce would you prefer?
A: vinegar base
B: mustard base
C: A & B

But with a nice roll it's hard to beat pulled pork with a delicious mustard/vinegar sauce.

But I tend to agree, it isn't needed.

Memphis BBQ is the best I have ever had. BBQ around SC is okay, so I'm not complaining, but it is what it is. Unless you've been to Memphis, I won't place too much value on most opinions. But to each their own when it comes to food.

Agree with most, as long as it's good, I like them all, and none can cover for a poorly cooked BBQ. We've all been to the chain types that boast 8 different sauces and all are bad.

If you must go to one of those chain places with bad sauce, try putting multiple of the bad sauces on your BBQ.

Typically places that try to make various sauces miss an important flavor in each of them but typically find it with another one.

It doesn't make the sauce great but it improves those sauces that come up short alone.

Reminds me of a story ... my wife's best friend lives in PA. The first time we went to visit they said we were having BBQ for dinner ... I was like GREAT!

When he brought the hamburgers out on the porch, I was deeply confused and bewildered ... Even though I had partaken in ample amounts of adult beverages to that point in the evening, I knew something was not quite right.

I asked about the BBQ and he showed me the raw hamburger meat on the tray ...

It took me a few minutes to regain my composure and comment back to him -

"BBQ is a food, not a process."

It can be done well but even a good vinegar sauce can't be lathered on like a mustard or ketchup based sauce.

A vinegar sauce must be an accent to the flavor of the meat and not the main flavor of the combo.

You will be happier with a good vinegar based sauce if you use sparingly.

There is so much vinegar, that is all you taste. And, speaking as an engineer, it is hard to have a "little" bit of vinegar taste, as it is detectable down to 4 parts per BILLION.

The only exception would be a meanass sauce made from Grapette soda. SC mustard based sauce is a disgrace to any properly cooked BBQ...

Vinegar is the only option here for legit BBQ.

I do like mustard based on chicken, but not on BBQ.

Hope you don't mind if a friendly Dwag kicks in here ... my favorite food group - BBQ!!

First of all congratulations on your pickup yesterday. What a head of steam Clemson has in recruiting this season. Shaping up to be a class that will be long remembered ... even after they graduate.

B) Mustard is my #1 choice - maybe because I went to school in the state of SC and that's what was prevalent

A) Vinegar would probably be me #2. If it is a true Virginia or NC vinegar (thin) then you have to top it with cold slaw

Two least favorite things are if folks:

1) Use a super sweet and think sauce. It covers up the taste of the meat ... which is more important than anything ...

2) Keeping the BBQ warm and moist by keeping it in the sauce prior to serving. That is when it becomes more about the sauce than the meat.

I like my ribs dry with a good rub.

ANY meat kept under the heat lamp too long makes it dry and takes the taste away. Taught my boys (adults now) if you go in a BBQ place and do not hear chopping - leave!!!

Another pointer, if you are on a state hwy and see any type building with a BBQ sign and there are more than three of the following vehicles ... STOP, it doesn't matter if you are not hungry:

- Local law enforcement vehicle
- Ambulance
- Cherry Picker

Vinegar. But I would have to specify that whatever is in a jug held by a coot is NOT vinegar.

But we only have VT alums (60%) , UT alums (20%), a lost and sad little coot, and the enlighten Clemson alums. The only NC school represented is Campbell (mother and uncle). Sadly the only NCSate alum passed away a few years ago.

Otherwise if an argument broke out, someone would give the coot a ride home because they are drunk and we don't want to spoil the family environment.

Why would anyone want to put vinegar on BBQ? I clean my floors with vinegar. Spoiling BBQ with vinegar dishonors the pig that honorably died to bring you happiness.

BTW, real BBQ has a rub not a sauce on it. Sauces are for dipping.

Vinegar is the gift of many talents. Both humble and extraordinary. The Renfrow of the BBQ world.

BBQ "flavor" comes from the process and the smoke. Vinegar as a catalyst, bring out the richness of the smoke as well as the fats/flavor of the pig. It also keeps hydrates and aids in the breakdown of some cuts.

Rubs, especially highly peppered rubs, hide bad meat, bad smoking technique. Same with thick/sweet sauces.

The flavor should be in the smoke and in the pig. Vinegar aids, but is not a "sauce" so to speak. The "Vinegar sauces are really tomato sauces with vinegar as a defining flavor. It is a key to the process.

BBQ is pork, venison, or fish. Those cattle folks overcook the beef. ;)
