At 72 years old, I became a smoker Sunday……

I received a Weber Smokey Mountain Smoker for my birthday. On Sunday I smoked a spatchcock chicken using apple and hickory woods. Oh Wow, I never knew chicken could taste so good. Next I’m going to try my hand at St. Louis style ribs.
Shame on all you lifelong smokers for not converting us non smokers years ago. And for all you non smokers, get yourself a smoker and start puffing away. Your neighbors will thank you.

Smoked salmon. Sprinkle a little lemon pepper right on the fish. I prefer hickory. Give it a smoker kick by adding a few drops of liquid smoke to the water reservoir. I never use liquid smoke directly on the meat. Could also use a plank as well. Ohhhhh baby!!

Back in the 80's, I had a Mr Meat smoker.

It lasted a long while because it was kept in a large, well ventilated garage and I cleaned it religiously after each use. Somewhere along the way, it was lost or discarded. I got another knock-off brand several years ago and it sucked. It worked fine in the summer, but with those super-thin walls, it was impossible to hold a temp in the cooler seasons. So, I was resigned to cooking on a gas grill for the last 5 or 6 years. Gas is really convenient and is OK for burgers, chicken breasts, and other quick-cook meats, but won't get hot enough for steaks, and won't hold a low and slow. I even tried a smoke box in my enormous Weber, but I would always have to lie to myself and say that pork, turkey, and other large cuts turned out close to the taste of a real smoker. To make a short story long, I splurged a couple of months ago and got an XL Big Green Egg. There's really nothing you can't cook on a BGE, you're only limited by what size you get. I'm a happy smoker once again.

I had a knock off egg for years and loved it. I have dreamed of a Memphis pellet grill for years and bought one 2 years ago. It is just great and you can smoke or grill. Congrats on the Weber , it will now have opened your eyes to vast tasty food options. One suggestion try reverse searing a steak yummmmm

Try smoking an oily fish like Spanish or King mackerel. Very tasty.

Nice George Clinton avatar! I saw him in concert at Lollapalooza 94 and after his set he came out and cruised the crowd while another musician played. He walked right by me but I could smell him coming before that. I said, "### George, you're as funky as your music!" He turned and smiled and said, "That's right!" and cracked a big smile.

Just got a pellet grill this past Father's Day, and Thanksgiving turkey is one I'm already looking forward to. Along with Christmas ham.
Did my 1st pork shoulder couple weeks ago and it was 2nd best pulled pork I've ever tasted. Only one better was a BBQ place across the street from Memphis University campus.

I used to smoke Arturo Fuente's when I played golf or worked in the yard. Funny how that fad disappeared.
