Any Peanut Farmers On This Board?

I must confess, I'm addicted to green boiled peanuts. Was able to get about ten pounds today and have some on the stove now. Oh, they smell so good and they taste like a bit of heaven. During my early working days after coming to Clemson I traveled over much of the Southeast and made a special effort to visit the peanut growing areas when the nuts were ready for harvest. I would get one-half or a full bushel of nuts, boil those rascals and load my freezer for the winter and football games. Over the past several years, it's been a hit and miss affair on a source of green nuts and that's not conducive to a happy attitude.

I know there must be other green boiled peanut lovers out there who may be looking for a source of those wonderful legumes.

In my opinion, frozen boiled peanuts are better warm than cold. Just my opinion.

When I take them out of the freezer, I bring them back to a boil so they are fully thawed. I bag them in one quart baggies.

I boiled around 12 or 13 lbs Saturday. What’s left are bagged in the fridge but they won’t make it til the end of the week. I probably cook around 50lbs this time of year but I’ve never frozen any myself, but I've had some that had been frozen.

Not telling my age, but I've been enjoying boiled peanuts since about the time Fred Cone and Ray Mathews were playing for Coach Howard. I grew up on a farm in lower SC, and we planted peanuts for boiling every year. As teenagers, we had peanut boiling parties around a big black wash pot full of boiling peanuts.

But, I'm not easily satisfied with boiled peanuts. They have to be fresh green peanuts, not frozen or dried, and I can smell them cooking and tell if they are fresh. I don't care for them if they have been frozen after cooking either.

A few years ago, my son found a process of boiling peanuts in jars in a pressure cooker, and he will only cook fresh peanuts. A two year old jar of his peanuts taste like fresh peanuts just boiled. Within the next few weeks, I will get a bushel of peanuts and supply of jars to his home in TN.

I'm down to my last two quarts from last year.

few years. I've always felt like I'm a semi-pro cooking boiled P-nuts. Green have to be the first priority. I have had friends win Boiled Pnut competitions using my recipes.

But here is something a little new to processing for future use. First of all, some like the Spanish reds better than the Jumbos. But i discovered there is middle ground where you can buy green "Whites", where you don't have near the pops as Jumbo's, you have more nutty flavor than Jumbo's, but you have more of the Jumbo crossover between Spanish and Jumbo's. So look for "Green Whites" for boiling.

Here is the next secret! When you freeze boiled peanuts, they always get grainy. You can tell when boiled nuts have been frozen and rewarmed! So, to prevent this and to capture the available green peanuts, buy what you want whether a peck or bushel, but freeze them in ziplocs green, cook them as needed, these will be the best green frozen pnuts you have ever eaten, except fresh of course.

Last secret, i use large quantities, but i boil the nuts with at least one big bottle of strong Malt liquor beer which gives them a sweeter taste but alcohol is long gone before consumption. I like Old English 800, just fyi.

But freeze them uncooked green and they are better.

Have friends that farm them. I get them to put a bushel or two in a cabbage bags when they are harvesting. Harvest is around October in S.C. Peanuts are not all the same. The big old nice ones for boiling are different variety than many I see. I have seen them for sale in Piggly Wiggly stores in Oraneburg area starting late summer or early fall.

When I see some I will give a shout.
