Scored the fat cap

225 on the BGE

6 pm til about 4:45 AM

208 internal temp and nice and barky

No gadgets and heat sensors and automatic gizmos

Used a store bought rub and it was 5 minutes of meat prep, 35 minutes of grill prep and 10 hrs of cooking. No foil and towel and cooler and secret methods, just think like Duane Coleman and smoke it

Internal was 208–212 according to thermapen.

The family seemed to enjoy it as well.

My BBQ yoda said to math it out to 9 hours which will wind up 7.5 hours. My other BBQ guru says to wait 4 more hours than you think.
