My mother-in-laws macaroni salad is quite possibly the worst thing I have ever consumed in my entire life. The recipe boils down to macaroni noodles, mayonnaise (probably Hellman's because Californian), chopped dill pickles, about half a jar of pickle juice, and pepper. I nearly vomited last night when I ate it with dinner. Lets call it "sauce" for the lack of a true word, but when you have macaroni salad, it is supposed to be at least viscous. This stuff flowed like a river when served on a plate and left a milky residue on the plate once I finished the serving.
Never again. These people can NOT be trusted.

I prefer my macaroni salad a little more passive and pacifist. No need for aggressive and angry side items.

she stirs the mayo and adds cheese cubes (what's that about?) while the pasta (and she uses the little short tubes not real macaroni) is still hot.
rest of the recipe is same as yours, so in addition to runny sauce, the the pasta is all clumped together by the partially melted cheese cubes -

My MiL is from Cali too so maybe it's a thing out there.

My moms pasta salad has cheese cubes, tomato, and a few other diced veggies... so your MIL's recipe sounds like a macaroni/pasta salad hybrid.
So at what point does macaroni salad transition into pasta salad?

If so, that’s a dead giveaway. Good cooks don’t have to add “famous” to the title. I had an uncle who made his “famous chili” every year that tasted like unseasoned tomato sauce with kidney beans thrown in.

My MIL makes these “cookies” that explode in your mouth (giggity) into a burst of granular, dry, dusty, flavorless particles. It’s like biting into a sand dune. It’s like if you took a pecan sandy, kept all the dry horribleness and got rid of the slightly redeeming pecan flavor. They require a liter of water per cookie just to keep the mouth and tongue from desiccating. I wouldn’t feed them to a dog, because the dog would assume I was trying to assassinate it and run away.

dinner. In a small bowl, there was a peach half - and it was from a can, had that real syrupy look to it, in side the half was a blob of white substance, I assumed it was sour cream, but still could not figure out why, on top of the white blob was shredded cheddar cheese.
I had to ask - what is this? "Pear salad" was the reply, that white blob was mayo - a huge scoop of mayo with cheese on it in a canned pear half is what some southerners call "pear salad".
I did a quick, sorry I do not like mayo and left that thing in the bowl. LOL.

My in laws have jello pretzel salad as a side during Thanksgiving and Christmas. Not as a dessert, but as a primary side that is to be served alongside mac and cheese, mashed potatoes and gravy, and stuffing.

Canned pear halves, spoonful of mayonnaise, some fresh shredded cheddar, all set on a piece of lettuce in order to call it a "salad". When mom wanted to make us feel fancy, there was a cherry on it for garnish. We may not have had fancy foods growing up, but what we had was made with love.
I can still taste it in my mind, and will probably stop today and get the stuff to make it tonight. Good memories.
Oh, and peach halves have cottage cheese on them for a peach salad. Don't remember having shredded cheese on those though.
