Ripping off Aero's post lets argue about bacon

I have cooked bacon many ways in all my years; from the microwavable bacon tray in college, to putting it on the smoker. What is the best way to cook it? You guys came through with some life-changing recs on grits (boil in milk, add mayo), so what about here?

My current method, which thus far has proven to be pinnacle of my cooking methods, is thiccc cut from Costco, medium-low heat in the cast iron on the stove, flipping a few times as it cooks, and then stacking it so the grease soaks in. No dabbing it off.

Though, I just bought a 17" cast iron that I thought would be a modest step up from the 15" but is in fact a monster and now too big for the stove so I may be moving to the grill.

“Bacon,” so uncivilized. When I’m preparing lardons, I will simply sauté them at a low heat with a touch of neutral oil to prevent sticking, and I only use high-fat content free range pigs, preferably Iberian and acorn fed.

Reserve grease cause you can use it for other chit.

350 degrees in oven, 20-25 minutes depending on size

Crispy as ####. Cook on aluminum foil on a bake pan and the clean up is easy.

if you are cooking real bacon, like Wright's.

Save drippings for anything else you need to fry up, especially onions.

Oh crap, yes use foil first then parchment paper.
