It isn’t a high five.
Second off, this proves nothing other than chicken parts on grill. We need future recommendations, we need evidence of crispy, rub deets, and what you would do differently next time.
For me, don’t waste your time smoking wings. Cook them directly over charcoal or wood. Hot and fast. Rub em down like you want and finish with a sweet and spicy sauce. It’s the best of all worlds. Should’ve offered all this knowledge earlier, but hoped you’d find another way. Smoke on homie. They look delicious!!! Hope y’all have the time of your life. With all 8 of those wings. Wish I could have a bite.

17.
I find the attention to detail here lacking. How are you going to serve a prime number of chicken wings?!?! At the rate Obed is going, I wouldn't be surprised if he told us he served those up with some Alabama white sauce instead of a proper bleu cheese.

I’m seriously considering getting one. I’ve done everything on the KJ for a decade now, but I’m having a harder and harder time maintaining a really low like sub-250 temp and getting any decent smoke, I assume it’s old gaskets, idk. I want to get a set it and forget it pellet smoker for long low cooks.

If you’re wanting to dip a toe in the water, I can’t say enough good things about this one. You aren’t going to do huge cooks but it’s handled everything I’ve thrown at it and it also is portable and has a cigarette lighter connection and alligator clip connections for a battery so you could smoke something while on an innocent mallard blasting session. I still don’t know how they sell it for this price.

Wouldn't it be simpler to just hit the brisket or pork butt or whatever with smoke on a charcoal grill for like two hours and then park it in the oven at 250° for the rest of the time? Same effect and no need for new equipment. Plus you're less likely to get mocked by anonymous pissant Italian car owners on the internet.

Brisket cooking with a Jersey boy, and answer by saying that the smoke is the entire point. You don’t get a gorgeous smoke ring and flavor in the oven like you do with constant smoke.
Whether I’m on my Kamado or the pellet, I’m using a deflector to make the heat indirect, so it’s irrelevant whether the 225 degree ambient air temp is heated by charcoal or pellets.

I'd never argue that oven brisket is the same as barbecue.
Jun 2, 2023, 4:21 PM

That's why I'm saying you start it on the charcoal grill to get the smoke and then finish it in the oven where you can maintain a level temp. There's a point where the meat won't take any more smoke anyway, so even if you have a pellet smoker you could save fuel by moving the meat to the oven after a certain point.

I'm not sure I can agree that I'm saving fuel

This one I have is pretty stingy on wood pellets, and I'm 99.9% certain I'm using less electricity using it than running the oven. I also can't agree that the meat won't take any more smoke. A brisket done 6-7 hours on a smoker is going to have more smoke flavor than one done two hours and then moved to the oven.
Don't get me wrong, oven could work really well, and it would moot the smoke issue if you were wrapping with foil, not much of that smoke is making it through the foil. I'm wrapping with butcher paper though, so definitely keeps the smoke passing through.
I guess the last thing is like anything in life, some ways are just more enjoyable than others to accomplish virtually the same thing. You could have gotten a used Toyota Yaris that would have gotten you just as effectively from point A to B, but you didn't, because there was inherent enjoyment it doing it in something different. Same with smoking. On a nice day I'd rather be hanging around outside, drink in hand, watching TV on my deck with the smoker cooking away than walking back into the kitchen and checking the oven. Just hits different.

I did 250....started with skin side down flipped every 15 minutes for an hour or so. Took it up to 325 and cooked each side for 10-15 minutes until I was happy with crispiness.
Sauced em (I was in a hurry, franks wing sauce and honey) and put back on for 10 minutes total to cook the sauce in.
I was really happy with the crispiness and flavor, enough that I wasn't missing a post-cook fry. What I probably would do next time with a little more time is use a sauce with a little sugar content (or just more honey) and have the grill next to my smoker super hot and put a quick char on them post-saucing.
