Mine is pellet grills with the meat probes.. it tells you the internal temp. Before that it was totally hot or miss.

To get a good steak, ya gots to start out with a good steak. It needs marbling- good lines of fat. If there's no fat, it will dry out and be your shoe leather. Second, ya gots ta turn it several times. Dont let it sit one side for more than about 5 min. Get the grill good'n'hot before ya put it down. The steak has to sear quickly. Searing it quickly causes the sugar in the blood to carmelize. This keeps the juice from coming out. Lastly, DO NOT POKE THE MEAT. ya put a hole in the dern steak, the juice is going to come out and you'll get a dry steak. Let it sit for 10 minutes, or more, before you cut that bad boy. Do it this way and , God forbid, you want a well done steak, it might still be ok. I guarantee that if you want it rare- medium, you'll be fine. Please dont do the well done. Ya might as well pick up some road kill

Chicken that was fried.
Yellow squash (that was growing in my garden 45 minutes earlier) baked and topped with parmesan cheese.
Green beans (that were in the garden an hour earlier) seasoned with paprika and a dash of red pepper.
Sweet, yellow corn-on-the-cob that was found in WalMart about 1pm.
Washed down with The Mole's Famous Ice Tea which is a tad STRONGER than Jimmy's in Easley (on a good day).
