They definitely look pretty, and looks like a fun cook. Using the corer looks a little unnecessary, could do all that with a paring knife. I'm sure it tastes great, but I'm not certain I'd want to eat 2/3 of a whole vidalia onion. Then again, I feel the same way about stuffed peppers.
