Red, white, post, pin, live, whatever. People will argue that red oak is the best for long cooks, but some of that may be driven by internet hype. Pecan will probably always be my go-to though--perfect combination of fruitwood and the big hardwood punch you get from oak/hickory.

I'm a pecan for beef, peach for pork / chicken kind of guy, but I grew up in GA so I'm biased.
Like you said, pecan is much less "harsh" than Oak, and WAY less "harsh" than mequite / hickory, IMO. I don't mind using oak once I've wrapped it, as it burns pretty good too
and tons of dudes smoke with oak ha

I think I have a contact that can source as much of it as we want. And the nails give the meat a nice metallic tinge.
