It looks thick if you look at pc by the spoon, I figured it was salted pork, but could be extra thick bacon. I always use bacon ends and pieces for mine, it always has the heavy smoke flavor to add to the stew. But its not the same without some browned pork belly of some type.

Actually I bought some stuff called Yellow bird blue agave siracha and used it. Was a gonna use the go to Cajun sunshine but decided to switch it up.

I was given the title "Master Chef King of Catfish Stew" about 10-15yrs ago. When someone can make a good pot of catfish stew, I give them props! Enjoy!
