Anyone else smoking meats all night?

Sep 5, 2022, 1:41 AM

Just started on a small pork shoulder that'll need a good 12-15 hours. Plenty of time to get the sides finished for game time tomorrow night

Trying this time with Sweet Baby Ray's hickory binder and some random rub I had sitting around.

Smoked 1 brisket... 2 butts and about 10 baby's backs and 2 spare ribs.

Sounds like there should be a case of Budweiser involved.

Dang. Leaving MN right now and will be at your place in 19 hours! I was not planning on firing up the smoker today. Now I wish that I had. Thinking I need to run to Costco quick to get a brisket flat.

the attached picture was known to us as none other than "Smoke Meat",said as one word, smokemeat. Not only was he my center on the 9th grade basketball team at Eastside, he was also the center on my 9th grade football team. I knew him very well, but I only met him when we started football practice in August of 1972. As a QB, you can imagine how close I was to the center, taking many snaps from directly under him, THE ONLY WAY IT WAS DONE BACK THEN. Everybody addressed him as "Smokemeat" and just "Smoke" to those that were around him every day. We start practice the first of August, play 8 games, and then basketball starts the next day. After maybe 3 weeks of tryouts, Coach Steadman posted the names of the 12 guys who made the team (And then 2 guys had to play a game of 1 on 1 for the 13th spot. I don't know who the loser was, but David Taylor #41 won it. It was a cruel way to pick the 13th guy!? ANyway, the day the names were to be posted we all ran to the gym as soon as class was over for the day and everyone was looking at the names.....everybody standing there, after a minute or two said,"Who is Michael Thomas?".....And then in the back ground we hear a deep voice say,"Das me". It was Smokemeat! I swear, I don't think anyone knew his Christian name before that moment!

Have you ever tried smoking "pork shoulder steaks"? They were o sale the other fiat so I thought I would give it a true. I had about 5 "steaks" that probably totaled 6-8 lb.

It only took about 4 hrs to smoke and it came out better than any pork butt I've ever smoked.
