dissolved as the water is heating up. We're talking pinto here folks or other dry beans.

It's the secret to getting beans. Scrub and rinse them in cold water. Scrub mean so reach into the bowl of cold water and beans and grab all the beans you can grab and squeeze them together so the friction between them breaks the dirt loose off the shells. Do this until the water drains off clear. Some brands beans require more washing than others.

Do that quickly and after your water is boiling to which you've added a measure of salt when it was cold.

Of course, 'looking,' the beans is important so picking them up a little at a time with one hand and dumping them in the other, no more than 15 or 20 at a time and looking at each bean to ensure it isn't a lump of cows dung, which is what you get from beans grown in the midwest. Of course you can leave the crumbled cow pies in the beans but you should at least count them so you can boast of how good pints seasoned with cow chit taste.

Beans are better if the salt is completely dissolved and rides to the middle of the seeds with the water. Lord help you if you don't have a pint jar with a couple spoons full of bacon droppings you toss into the pot.

I think the best pintos were from that producer who includes a little packet of ham flavoring. I have no idea what that packet contains because I don't put nothing but salt and a chunk of fatback, or another port product which is either cured or fresh.

Season the water and whatever you're cooking will be salty and need the slightest shake of a salt shaker.
