Eating early as both of us were hungry . . . Leftover burgers, baked beans, tomato/cuc/sweet onion salad and sweet gherkins for me, kosher dill ones for my bride.

I promise 2 things:
1) this one is simpler than your mom’s
2) it’s probably not as good
- Heirloom cherry tomatoes cut in half
- English cucumbers cut in half lengthwise, then sliced
- Vidalia or a sweet onion, rough diced
- Feta Cheese crumbles
- Olive Garden Italian Dressing
- Salt and Pepper to suit your taste
Combine the first 3, drizzle OG Italian Dressing over the top and top with feta cheese . . . SIMPLE
If we have Clemson Blue Cheese on hand, we’ll replace the Feta with it. Use any tomatoes you have, but we just like the different colors and tastes afforded by the assorted pkg of cherry tomatoes. Use any cucs you have, we prefer the English or the petite cucs as they don’t have to be peeled lending the salad their dark green color . . . yes, colors are important to us.
I only make enough to eat at one sitting . . . I’ve never tried to save any, as there is never any leftover!
