Pastry for 9-inch one-crust Pie
12 slices bacon (about pound) crisply fried and crumbled
1 cup shredded natural Swiss cheese
1/3 cup minced onion
4 eggs
1 cups half and half cream
3/4 teaspoon salt
Heat oven to 425°
Prepare pastry. Sprinkle
bacon, cheese and onion in pastry-lined pie pan. Beat eggs slightly; beat in remaining ingredients.Pour cream mixture into pie pan. Bake 15 minutes.
Reduce oven temperature to 300° and bake 30 minutes longer or until knife inserted 1 inch from edge comes out clean. Let stand 10 minutes before cutting. Serve in wedges.

Chicken thighs in crockpot with broth, tomato sauce, peppers, onions, small yellow potatoes, and green olives
Various spices, cooked 4 hours and served over rice. It was delicious!

Arroz con pollo, Puerto Rican style with pigeon peas and plenty of cilantro and lime.
Opened a bottle of 2018 Santa Cru AVA pinot from a maker called Big Basin. Quality stuff.
